Mark started and completed his apprenticeship at Observation City resort Hotel.
He covered all aspects of the kitchen, pastry saucier, cold larder and butchery.
He was instrumental in the success of Observation City's former seafood restaurant, Crusoes.
On completion of his apprenticeship he joined Fraser's Restaurant, Kings Park as a junior chef and has worked his way up to the role of Head Chef.
Mark's interest in spices and seafood were a key factor in the success of Fraser's consisitency and evolving menu's.
Mark was instrumental in all menus and events at Fraser's Restaurant.
Mark was also a keen reader of recipes from Asia and it's sub continental regions. He loved the abundance of Perth's fresh fish and shellfish and this was evident in the dishes that frequented Fraser's innovative menu.
