Our Head Chef Chris Taylor has travelled to Bali, Mauritius, Japan, Singapore, South Africa, Phuket, Jakarta, Zimbabwe, London, Ireland, Korea, the United States and extensively throughout Australia, hosting cooking classes, dinners and gala events to educate chef's and the general public of the quality of produce available in Western Australia.

 

Chris is a big believer in showcasing West Australian produce. He also enjoys tapas and dim sum, where one can experience lots of small tastes, and many different flavours. Hence, he is big on degustation meals - a culinary term meaning "a careful, appreciative tasting of various foods", which focuses on the senses, and high culinary art.

Degustation Dinners, at Fraser's...

Chef offers a Fraser's Degustation meal during any lunch or dinner setting (except special events), as long as he has a few days notice and there aren't too many large functions on. He creates the menu 'on-the-fly', depending on what fresh WA produce is at its best that day. Please let chef know in advance (at time of booking) if you are allergic to anything.

It will cost $105 per guest for a six-course meal, which includes dessert. Our sommelier can also ensure you receive a glass of wine perfectly matched to each dish, for $165 per guest.

 

It's a very impressive meal, with all the cutlery changes and different courses on varying plates - and a great way to showcase, or take your time and experience for yourself, the best produce that WA has to offer.

Degustation Dinners are available for one, two or a few… If you’re after a Degustation for a larger group, it is possible but please enquire with us direct, as it does depend on what we have going on that night.

6-course degustation, food only: $105, with wines: $165
7-course degustation, food only: $115, with wines: $175
8-course degustation, food only: $125, with wines: $185
....and we could go on!

 

Kitchen Tables are also available for a VIP Group Dining Experience...

This is a truly unique experience; a “back-stage pass” into the life, work and passion of a fine-dining chef,
and a must for all “foodies” and wine aficionados.

You and your guests (min 4, max 8) will meet at Fraser's bar and recieve a welcome drink (glass of Australian wine, sparkling white, beer or soft drink). Then our team will take you through to be 
seated in the heart of the action, where Chris will introduce the kitchen team and explain how the kitchen works and what it takes to be a chef in a fine-dining restaurant. Before the end of the evening, if you like, chef will take you on a behind-the-scenes tour of the Fraser’s complex, where you will see our various kitchens, cellars and service areas. Dessert and tea/coffee will be served out in the restaurant to conclude your evening.

This is an exclusive, unforgettable dining experience that we welcome you to experience here, at Fraser’s.

Please contact us at least a few days in advance (the more notice the better in the busy season) of your desired date so we can arrange everything. The best nights to enjoy these dinners are Friday or Saturday evenings, when the restaurant is busy.

 

What does a Kitchen Table cost?

It does depend on what food and wines are served and what your preferences are.
If you want premium wines or food, we can quote you on this.

Generally, you may opt for one of the Kitchen Table options below:

6-course Kitchen Table degustation, food only: $135, with wines: $195
7-course Kitchen Table degustation, food only: $145, with wines: $205
8-course Kitchen Table degustation, food only: $155, with wines: $215



What is included in the price? 


"Food only" options
This means that you pay for food only (however many course degustation you'd like), then you can just pay for your beverages on consumption, and choose whatever you want off the menu. Our staff and sommelier can of course, assist you with this.


"With wines" option
If you decide to go for this option, we will expertly match a glass of wine per guest, with each course (sommelier's choice). Fraser's 600+ wine list offers predominantly Australian wines - with some NZ wines.
